Co-created by one of Scotland’s most awarded Master Distillers, Jim McEwan and Cape Byron Distillery Co-founder and distiller Eddie Brook, this Australian adaptation of a classic Scottish whisky is truly remarkable and unique to the terroir of the Byron Bay region.

Tasting Notes

Aromas - Opens beautifully on notes of butterscotch hazelnut & nougat encapsulated in a halo of bourbon spiciness leading onto gentle notes of malted barley crisp and sweet, then the fruit & floral aromas emerge; pear & green apple, primrose & lily created by the yeast during the fermentation process predistillation. It's a beautiful olfactory experience, sweet malt, mellow oak, slow distillation & matured in a stunning location with the rainforest on one side and the ocean on the other.

Taste - Young fresh and vibrant, the cereal sweetness of barley & the mellowness of the oak are in total harmony. The fruit flavours created during fermentation work well with spicy residue from the bourbon that was the first spirit the cask held.

It's a beautifully distilled spirit and the finish is long and lingering. No chill filtration, no e150, just passion & pride in abundance.
